Fried Brinjals

Who doesn’t love the flavour of brinjal ,when fried ?Another simple dish which goes very well with rice and curd,its my favorite in the quick fix menu.

Fried Eggplant
Fried Brinjals

Ingredients:-

Small Brinjal sliced – 2
Onion sliced thin- 1
Curry leaves – a sprig
Chilly powder – 1 tsp
Turmeric powder -1/2 tsp
(Instead of chilly powder and turmeric,you can also use Sambar powder for a change)
Salt – to taste
Oil – as needed

Method:-

Make a thick paste with chilly powder and turmeric powder,adding little water.Add this paste to the brinjal slices and mix them well such that each slice is  coated with the masala.Shallow fry it in batches,turning both sides until  brown.Drain it to a tissue paper and keep aside.As an alternative,you can even broil it for 5-10 mts each side.
Heat little oil(use the leftover oil from shallow frying) in a pan,and saute onion and curry leaves until onion turns translucent.Add it to the fried brinjal slices.Mix and serve with rice.

    Adding sambar powder sounds cool. I like fried brinjal even though it absorbs a lot of of oil. I bought a grill pan recently and found out that grilled ones are also delicious.

    Grill pan sounds good..I think its time to start nagging my hubby about buying one…:))

    Are Brinjal and Eggplant the same? I don’t buy this veggie at all. I have seen so many recipes with eggplant, I want to make atleast some. Also do we have to remove its skin when cooking?

    They are same,Geena..No,u don’t have to remove the skin,if the recipe doesn’t calls for.

    i tried this recipee but then decided to change it a bit
    i added salt and pepper and herbal salt and a bit flour to make it a bit more crispy
    my parents liked it so i reched what i wanted

    This is a realy go-getter & gets finished as soon as it comes on the table. A colleague of mine used to get it to office & that’s where I learnt it from. And guess what, her husband makes it!!

    It goes well both with rice & chappati

    Started preparing this..but when to add salt ??
    i guess u add salt after shallow frying the brinjal so that it doesnt become soggy..

  16. I must say, as substantially as I enjoyed reading what you had to say, I couldnt help but lose interest after a while. Its as if you had a great grasp around the topic matter, but you forgot to include your readers. Perhaps you should think about this from extra than one angle. Or maybe you shouldnt generalise so very much. Its better if you think about what others may have to say instead of just heading for a gut reaction to the subject. Think about adjusting your personal believed process and giving others who may read this the benefit of the doubt.
