Potato stew I know of and I make very often, has just the cubed potatoes, sliced onions, lots of – slit green cillies+ ginger juliennes , salt, coconut milk(or regular grinded coconut) and finally for garnishing, lots of curry leaves and few drizzles of coconut oil. that’s abt it. No mustard seeds or garlic, or masalas or tomatoes are added to our stew. Well, I’ll have to try yours the next time I make Idli or Idiappams. Thanks for sharing this recipe.
