Biriyani Masala Powder

This masala powder can be used in any type of biriyani and hence very useful .I got this recipe from Shynee’s South Potpourri.
Ingredients:-
Cinnamon – 1 big stick
Cardamom – 3
Cloves – 4
Nutmeg – quarter
Fennelseed – half tsp
Cumin seed – half tsp
Shahjeera – half tsp
Mace – 3
Method:-
Dry roast the above ingredients and grind them to a fine powder.Store it in an airtight container.

Like I said before , I tried out shynee’s biryani recipe. Since I didn’t quite get the gm measurement, I just eyeballed it. Still it turned out very well. Anyways, how much is this 2gms and 1gm etc of cinnamon, cardamom, cloves, mace and what if Nutmeg powder is used how much tsps will it be? :(

Hi Annitta,
I came across ur blog while i was sitting idle in my office..I was so impressed at the sites simplicity, the pictures and of course the contents.. Your recipes look sooo wonderul that i feel hungry always now..Me & my friend copied so many dishes in our flash so that we can refer it in our kitchen.
We r in kuwait now and fed up with the usual dishes chor+thoran+some char kari..Will definetly give a surprise to our husbands.
BTW im looking for some paneer dishes..also how to prepare paneer at home?

This is not a garam masala recipe..but it can be used in other curries also if you wish..But i use it only for biriyani..
Mace is JathiPathri(Shell of nutmeg/Jaathikka)
And Shajeera is Black Cumin/carway seeds..It is smaller than jeera and has a different aroma

Indian Recipes – Garam Masala Powder by Mrs Annamma Philippose
Ingredients:
• 5 Cinnamon Sticks
• 1 Tsp Cumin Seeds
• 1 Tsp Coriander Seeds
• 7 Peppercorns
• 1 Bayleaf
• 4 Cloves
Method:
• Roast all the Ingredients:.
• Grind them into a fine powder in a mixer.

I use to have a friend from India, she always use Byriani is a powder from Bombay, we use to cook rice with chicken, that was the most delicious dish i ever tasted.
