Cauliflower Thoran

Posted by Annita on August 17, 2006

Cauliflower which belongs to cabbage and broccoli family, plays a major role in Indian Cuisine. It can be made into different delicious dishes, and this one is just one among them.I’ve prepared it just like any other thoran, florets of cauliflower are cooked with grated coconut and coconut oil and this goes well with plain rice/roti.

Cauliflower Thoran
Cauliflower Thoran served with roti

Cauliflower cut into florets – 1 medium sized
Sliced Onion – 1 medium sized
Green chillies chopped – 4
Curry leaves – few
Turmeric powder -1/4 tsp
Grated coconut – 1/2 cup
Cumin seeds – 1/4 tsp
Red chilly powder – 1 tsp
Asafoetida – a pinch
Mustard seeds – 1 tsp
Coconut Oil – as needed
Salt – to taste

Heat oil in a pan and allow mustard seeds and jeera seeds to splutter.Add onion, green chillies and curry leaves into it and saute till onion turns translucent. Now add turmeric powder, asafoetida, salt and chilly powder and fry for a while.Throw in cauliflower florets, cover and cook till soft in medium heat.Stir in grated coconut and simmer for 5 more minutes.garnish with little coconut oil and switch off the stove. It goes well with roti /rice.
