Tomato Rice

Yet another south Indian favorite,it is very simple and delicious with an appealing color as well.I always prefer this for unexpected guests or when i’m in a hurry.The end product is always rich and sumptuous with not much effort.

The recipe is again from Vanitha only and here it goes..


Basmati Rice – 400 gm
Red Tomato – 500 gm
Coconut Milk of 1 full coconut
Grated onion -1 large
Chopped green chillies – 6 or 7
Cardamom – 3
1″ size Cinnamon piece- 1
Cloves -5
Star Anise -2
Gingelly Oil – 4tbsp
Salt – to taste


Wash the rice and soak it for 30 minutes and then drain and keep aside.Puree the tomatoes adding coconut milk.Heat oil in the pan ,add all the spices and saute for a while.Then add onion and green chillies.Saute till brown.
Add tomato puree- coconut milk mixture and salt into the pan.Now add the rice and cilantro and allow the rice to cook for 15 mts.(Add more water if needed).Add 1 tbsp of ghee and mix thoroughly.Switch off the stove and garnish with coriander leaves.

You can have it with simple tomato raita , potato fry/papad and pickle.
