My Cuisine’s BitterGourd Rice

|And my first post after reaching home.Thanks for all your wishes,I had a real nice trip.But its very hot out here and my kid is having a hard time in getting adjusted with everything.Still it feels good to be back home.Enjoying amma’s cooking and relaxing ..
Yesterday my amma plucked some fresh Paavakka(Bittergourd)which were grown in our compound.They were really handsome with that fresh pale green look, rather than the green bitter looking ones which were available to us. I thought of trying out something new and different and to surprise my parents.Thus I prepared My Cuisine’s BitterGourd Rice from my “Must Try ” list .
I’ve just added some curry leaves to her recipe,and all the rest remains same
|Medium sized Bitter gourd -2
Medium Sized Onion-2
Red Chillies – 6
Curry leaves – 1 sprig
Salt – to taste
Oil – as needed
Ghee – 2 tbsp
|Grate the bittergourd and wash it thoroughly for 2-3 minutes and reserve.Grind together Onion and red chillies to a coarse paste.Heat oil in a pan ,add curry leaves,bittergourd and salt ,and fry well till the color starts to change.Now add the onion paste into it and simmer for 10 mts stirring occasionally.You can pour in oil if needed.Switch it off when done and add 1 tsp of ghee into it.
Mix it well with 3 cups of cooked basmati rice.Pour the rest of ghee into it and serve hot with raita.
Eventhough I followed exact recipe,it gave a slight different result ,but tastes great.(Compare it with Raji’s).
