Chinese Vegetable Fried Rice

| The harmonious integration of color, taste, and appearance made Chinese Cuisine popular all over the world. The choice of various ingredients, seasonings and the heating mechanism used in chinese cooking gives such a great perfection to all the senses.People in different countries add their own flavours and spices to Chinese food to customize it to their own taste. Fried rice ,with Gobi Manchurian as its side,is one of the tastiest and popular dishes in Indo-Chinese menu.I’ve got a real passion towards Chinese dishes,whatever it be.This is my favourite recipe of Chinese Fried rice and it’s always been a hit in my home. | |
| Ingredients:- | |
| Cooked & Cooled rice – 2 cups(Usually short grain rice like Sona Masoori gives a better look..) Choped onion- 1/2 cup Diced vegetables(Carrot,Green Beans)- 1/2 cup Green Peas -1/4 cup Chopped Capsicum,Celery & Spring Onion- 1/2 cup Whole dry chillies slit-3 Soya Sauce -2 tsp Green Chilly Sauce – 1 tsp Pepper powder – 1 tsp Vinegar – 1 tsp Ajinomotto -a pinch(I do not recommend using this for home cooking eventhough it enhances the taste.As everyone knows,its really really bad for health.)You can also use Bouillon cubes instead of Ajinomotto which is available in grocery stores.Bouillon cubes are not bad for health.You can get this even in health stores. Salt – to taste Olive Oil/Salad Oil – as needed

| Method:- | |
Heat oil in a pan and add onion and red chillies.Add all the diced vegetables and green peas and saute well.Add soya sauce,chilly sauce and salt to it.Stir for few minutes.Now add ajinomotto,capsicum,celery and spring onion and cook till vegetables are tender . Cook utill all the water evaporates.Finally add cooled rice to it and mix well on high heat.Add pepper powder and vinegar and again stir well.Garnish with Spring Onion greens.You can also add scrambled egg along with this.
If you have got all the ingredients ready,the process won’t take more than 10 minutes.You can follow the same procedure for chicken or beef fried rice,but it takes more cooking time.Serve it along with Gobi Manchurian.An excellent fusion cooking recipe of Gobi Manchurian is available in Hooked On Heat. |

wow , the fried rice looks just perfect. I make it almos the same way , except, green chilli and ajinomoto.And do u buy green chilly sauce or make it at home, i never buy any sauce except tomato sauce,so have no idea. If u buy it , which brand is best. ANd thanx for sharing the recipe.
I always buy green chilly sauce from outside.I’ve got “maggi” from an indian store.But I think you can use any green chilly sauce .Using green sauce will give that color..If you add red chilly sauce it ‘ll be more reddish..And I never use ajinomotto for home cooking,but for a party & all little bit is ok..It’ll give that Chinese flavour.
You can also use Bouillon cubes instead of ajinomoto

Annita, lovely fried rice! Desi chinese makes me drool. A tip – MSG or ajinomoto is indeed bad for health. Use a bouillon cube instead (you get Knorr cubes in the supermarket) which brings a lovely flavor to the dish. Another option is stir fry powders available in spice sections. They are much much better than MSG
Sometimes I also use bouillon cubes .But the idea of stir frying spices is completeley new to me.Which all spices do u use for stir frying ?

Sorry I didnt elaborate. Its a stir fry seasoning mix. Available in the spice rack of supermarket with other Chinese spices such five-spice etc.
Oh..yeah I’ve used that.Isn’t in an yellow cover?.Thats really good..but I thot that also might contain this ajinomotto…If that is safe i’ll be using that more often..I liked it better than bouillon cubes.

Very nice. Just a few tips, as I grew up on chinese food & with the chinese:
* Lots of chopped garlic is used.
* Chillies & onions r infamous.
* For the extra taste, use oyster sauce. It’s used in almost all the dishes. Lee Kum Kee is the best brand.

Dear Anita,
I tried your Chineese Fried Rice. It looks wonderfull. Ajinomotto is not that bad. The Japanese say there is no scientific base to the idea that Ajonomotto is harmful.
